My personal favorite is Dan Dority from Deadwood because he also does Al Swearengen's dirty work no questions asked.

    Sam from True Blood is pretty good. He's the only werewolf bartender I can think of.

    Sam from True Blood is a shape shifter, not a werewolf. That being said, I find Quark the most amusing barkeep.
